Happy (and healthy!) Super Bowl!

For some people, Super Bowl conjures up images of touchdowns, field goals and first downs. Me? Well, I was about 25 before I fully understood what a first down WAS (Seriously. It’s embarrassing.)

I always associated Super Bowl with family, friends fun, funny commercials…..and food. Buffalo wings, dips, pizza, what have you….Super Bowl is typically full of delicious and extraordinarily unhealthy victuals (I kind of love that word).

BUT, it doesn’t have to be that way. If you’re headed to a party, or you’re hosting one, consider bringing one of these dishes. You and your guests will have all of the flavor and none of the horror (well, at least LESS of the horror) the next day. I plan to make a couple of these things this weekend.

From Eating Well:

Boneless Buffalo Wings (uses whole wheat flour and less oil)

Creamy Spinach Dip (84 fewer calories and 10 fewer grams of fat per serving than a typical spinach dip)

Oven-Fried Zucchini Sticks

Lemon Drop Chicken Wings (with VODKA!)

Fudgy Chocolate Brownies

I don’t have fabulous recipes to share, but I do haveĀ a few general food suggestions: turkey chili made with low-sodium seasoning (check Whole Foods for a great one!), sweet potato fries, veggies and hummus, lettuce wraps, and angel food cake with strawberries.

My life has always been pretty darn fantastic--except for one thing: my weight. Not too long ago, I tipped the scale at 283 pounds. I'd gain some, lose some and gain some right back, and I was so frustrated. When I saw a notice for a Biggest Loser-style contest in my local paper, I applied on the spot and I felt like I won the lottery when I found out I was one of the five contestants chosen. We worked out four times a week with trainers and followed a clean eating diet, and my life completely transformed. I've lost more than 60 pounds and I'm feeling confidence for the first time in my life. I'm 29 years old with a great husband, a rewarding job, two adorable dogs and fantastic friends. Weight loss continues to be a struggle now that the contest has ended, but this time I know that I can do it and I'm fully committed. This blog has seved as an accountability tool as I journey from a happy, but fat, person to a happy and confident person. And for the first time in my life, I'm no longer putting it off until tomorrow. This time, I'm starting this minute.
